Seat swap, now won't run

On these New Holland skid steers, how much do the seat switches and connectors need to match before a replacement seat can keep the machine from starting or enabling the controls?

The seat can fit fine and still cause a no-start or locked controls if its seat switch is different. Connector shape alone isn't enough either. The machine may be looking for a normally open vs normally closed switch, or a different pin arrangement.

Compare the original seat switch and plug pin-for-pin with the replacement, using the wiring diagram for that exact model. Don't jumper the safety circuit. If the old seat makes the machine work again, that separates a seat/interlock mismatch from an unrelated fault.
